Vegan Chocolate Puffed

Quinoa Energy Bars

Ingredients:

  • ⁠100g puffed quinoa
  • 130g soft dates (seeded weight)
  • 100g runny nut/seed butter
  • ⁠125ml non-dairy milk
  • 20g cacao powder
  • 1/2 tsp cinnamon
  • 1/4-1/2 tsp sea salt

Directions:

  • Blend soaked dates, nut butter, milk, cacao, cinnamon & salt until smooth (You can increase the amount of milk based on the texture).
  • Mix with puffed quinoa.
  • Press into a lined tin & freeze for 30 mins.
  • Slice into bars & enjoy!
